ABOUT THIS WINE
The pinot for this wine comes mainly from Les Longeroies, which is planted on mpstly clay and limestone soils. In the cellar, 35% of the grapes were vinified whole cluster witha short cold maceration, one pigeage for one day at the start of the alcoholic fermentation, then pump-overs during maceration for a gentle extraction. This was followed by 17 months aged in French oak barrels from the Jupilles forest, 5% new oak. This wine sees no fining or filtration.

From their base opposite each other in Nuits-St Georges, Domaine Tawse and its négociant arm, Marchand-Tawse, are jointly responsible for a tempting array of red and white Burgundy. The domain was developed in 2012 by Burgundy aficionados, Pascal Marchand, a Burgundy négociant with a career that included Comte Armand and Domaine de la Vougeraie, and fellow Canadian, Morey Tawse. The heart of Domaine Tawse, formerly Domaine Maume, lies in Gevrey-Chambertin and produces outstanding communal, premiers and grands crus from Gevrey and the northern sector of the Côte de Beaune, all of which are farmed biodynamically.
Englishman Mark Fincham, who came from Domaine de Pegau in Châteauneuf-du-Pape, is the domaine’s winemaker and his wines are modern, elegant and easily approachable even in their youth. The négociant arm, Marchand-Tawse, showcases the region's best using bought-in Pinot Noir and Chardonnay grapes from vineyards ranging from entry-level Bourgogne to grand cru with winemaker Thomas Dinel overseeing the whole process from grape to bottle and taking its well-made range of Burgundy to the next level of quality.
