The 2024 âMeltemiâ is crafted from 50% Aidani Mavro (a rare indigenous red variety) and 50% Mandilaria, both native to the Cyclades. Sourced from organically farmed vines rooted in Parosâs volcanic and limestone soils, the grapes are hand-harvested and gently pressed. Fermentation occurs in stainless steel to preserve freshness, followed by a brief rest on fine lees for added texture.
