NV Domaine La Borderie "Trois Contrées" Extra Brut, Champagne, France
ABOUT THIS WINE
âTrois ContrĂ©esâ (Three Regions) is a single-vintage, multi-parcel cuvĂ©e composed of 100% Pinot Noir from three villages in the CĂŽte des Bar: Bar-sur-Seine, Merrey-sur-Arce, and GyĂ©-sur-Seine. These sites offer a complex interplay of Kimmeridgian and Portlandian limestone soils, contributing to the wineâs mineral edge and structural clarity.
Fermentation is carried out with indigenous yeasts, and a portion of the wine is vinified in oak barrels for added texture. Aged on the lees for around 30â36 months and finished with a low dosage (Extra Brut, ~2â3 g/L), the wine is dry, focused, and layered. Itâs ideal with oysters, sashimi, or aged cheeses like ComtĂ©.
