ABOUT THIS WINE
This sherry wine is 100% Palomino Fino created using only free-run and first gentle press juice. Controlled fermentation is completed in stainless steel tanks. The wine is fortified to 15.5% ABV to allow the flor (a layer of yeast) to thrive, protecting it from oxygen and imparting a pale color and savory, bread-dough aroma. Finally, the sherry is aged for an average of 3 to 5 years (minimum 4 years) in a traditional solera and criaderas system, ensuring consistent flavor and style.
