âChamp Violeâ comes from a single parcel of Chardonnay planted in 1989 on Kimmeridgian clay-limestone soils in Celles-sur-Ource. Fermentation occurs with native yeasts in stainless steel, and malolactic fermentation is completed. The wine rests sur lattes for a minimum of 36 months, enhancing its texture and complexity, before disgorgement with a minimal Extra Brut dosage.
