Inspired by French Tomme-style cheeses, "Walden" is a semi-soft, natural-rind cheese made from raw cow’s milk. Aged for 60+ days, it develops a rustic, earthy rind and a supple interior with notes of cultured butter, hay, and a touch of cellar funk. Handmade in small batches at Sequatchie Cove Creamery in the foothills of the Appalachian Mountains.
