ABOUT THIS WINE

The "La Vigne Cendrée" vineyard is planted on a 0.5-hectare plot with a mix of grey schist, rhyolite (volcanic rock), and clay. High-density plantings ensure low yields and concentrated flavors. Fermented with indigenous yeasts, without malolactic fermentation, and aged for 12 months in a combination of 350L and 500L barrels, as well as foudres. No new oak is used to preserve the wine's purity. Manual harvesting with multiple passes to ensure optimal grape maturity. Ideal pairings include dishes like monkfish in bacon papillote or celery mousseline with dried fruits, which complement the wine's rich texture and mineral complexity. Best enjoyed after 2028, with peak drinking through 2044.

Thibaud Boudignon is a former professional judoka who transitioned into winemaking, establishing his estate in 2008. With training at esteemed estates in Bordeaux, Burgundy, and the Loire, he founded Domaine Thibaud Boudignon in Savennières. His vineyards are farmed organically and biodynamically, emphasizing minimal intervention and showcasing the unique terroirs of Savennières. Boudignon's wines are known for their purity, precision, and expression of the Chenin Blanc grape.
