The "La Vigne Cendrée" vineyard is planted on a 0.5-hectare plot with a mix of grey schist, rhyolite (volcanic rock), and clay. High-density plantings ensure low yields and concentrated flavors. Fermented with indigenous yeasts, without malolactic fermentation, and aged for 12 months in a combination of 350L and 500L barrels, as well as foudres. No new oak is used to preserve the wine's purity. Manual harvesting with multiple passes to ensure optimal grape maturity. Ideal pairings include dishes like monkfish in bacon papillote or celery mousseline with dried fruits, which complement the wine's rich texture and mineral complexity.
