ABOUT THIS WINE

100% Sauvignon Blanc grown on clay and Kimmeridgian limestone. The grapes are hand-harvested, then undergo cold-maceration for 3-4 days. Temperature controlled fermentation. The limestone parcel where it originates is called “Les Pierres Plates”—the flat stones—which is filled with fossilized shells from the Kimmeridgian period, when France was covered by ocean.
